Birthday #2

As I said earlier I would update later with pictures and news on Erin’s surprise dinner. Erin was my roommate freshman year and when you first meet her you would not at all think she is a whole year older than everyone else. Well she is, and she is a triple…super cool right? Erin’s birthday originally is in June, but because none of us will be around for it we decided to do something for her. Her boyfriend TJ, Liz, Annie, and I planned it and Erin had no idea. She was extremely surprised and dinner was great!


As soon as she arrived she had to get pictures with everyone. Thank god my camera batteries lasted just long enough!

After dinner we came back to our room and had cake! A cake I baked, a funfetti cake…they are probably my favorite cakes of all time. But that is for another post. So along with our cake Liz so generously shared some of her watermelon with us.

You may not be able to tell, but on this cake I organized the candles to say 21!

why am i up so early?!

Because I have my final pre-departure meeting for studying abroad….wahoooo. So my mom and my sister drove down yesterday after school to attend the meeting and get all the necessary details. My sister will stay with me after the meeting to help me pack up my room, make a cheesecake (yum), go to the movies and just have fun (she doesn’t think its going to be fun, I don’t know what her idea of fun is). Tomorrow my mom will pick my sister up in the morning and pack up most of my room into their car and drive the 10 hours back to NH (in two weeks I will have to be doing this same brutal drive). Okay onto the good stuff. TWO SURPRISE BIRTHDAY PARTIES IN TWO DAYS!!

Birthday #1: My cousins 16th birthday
-Arrived at the bowling ally around 5:45pm, he arrived around 6pm!

– Bad picture, but you get the point he was surprised as well as confused. Perfect exactly what you want at a surprise party.
– For the rest of the night I bowled with my two younger cousins, and my uncle. My grandmothers shoulder was hurt so she couldn’t up a ball (I think she just didn’t want to loose ;)..)


– I played my uncle in a game where we bet twenty dollars goes to the winner. I was winning the entire game and had won, until he got a spare and got to go again. He then beat me by 1….I mean ONE pin. It was horrible. I am never going to pay up though…hahaha
– By 8:30 it was time to go and I said my goodbyes to my newly 16 year old cousin!
Birthday #2: Erin’s almost 21st birthday!

bbq chicken pizza

So last night for dinner I made bbq chicken pizza, it was really good, but there are definitely some changes I will make. The only ingredients that I used were a store bought pizza crust (you could make it your own if you like), a chicken breast, Sweet Baby Rays bbq sauce, mozzarella cheese, and any other toppings you may want. 

1 Pizza Crust
2 Cups Mozzarella Cheese
BBQ Sauce (I used Sweet Baby Rays)
1 Chicken Breast

Step 1: Preheat oven to 350 degrees
Step 2: In a bowl mix cut up chicken with bbq sauce 
Step 3: Spread bbq sauce on the pizza crust, basically this is up to you, if you like a lot of sauce use more if you like less
Step 4: Add cheese to the pizza (as I said before I love cheese so we used a lot)
Step 5: Add the chicken on top of the cheese
Step 6: Bake in oven for 15 minutes until dough is cooked and cheese is to your liking

The things I would change with this would be not putting oil on the crust before I put bbq sauce (I didn’t include this in the steps because I didn’t like it, but on the pizza crust it said to dust the crust with it). I also would put the chicken on the pizza first and then put the cheese on. In the first picture I included the chicken was placed before the cheese and I like the way that turned out better. Super easy and if you are craving pizza a great idea! Well lots of things are going on this weekend so I will be sure to post! Just a little something to look forward to…lots of birthdays….lots of cake….family….maybe some more pizza…and last but not least LOYOLAPALOOZA!!!


Well now that I am back at school and back in the swing of things I figured I would write a post about easter. Well easter was interesting in the Welch household. We arrived around 4pm to my grandparents house where not only were the appetizers flowing but also the drinks. As the “adults” sat down to eat some apps and have a drink the kids were off on an egg hunt. It is the same every year, each child gets a different room. This year we each had five eggs with a dollar each in them. I was off my game and could only find 3 eggs at first. I enlisted the help of my grandfather and dad, as my grandmother insisted I was to old for help and I didn’t deserve it. With my dads brilliant eye sight an egg was found within the first minute of him walking into the room, I had even checked in that spot so I was a little miffed. Oh well….after about 15 minutes everyone had found their eggs and we could all enjoy the appetizers. My grandmother makes this amazing cheese dip (so bad for you, but SO good) and we had shrimp cocktail. At our house if you want shrimp you have to make sure you get it before Thomas gets to it because he will eat the entire platter. After appetizers we sat down for dinner, it was easier to serve everyone buffet style so we marched to the kitchen to find heaven. 

As you can see I did not “stuff” my plate. I wasn’t as hungry as I thought I was going to be, as well as the appetizers filled me! Well along with dinner came lots of things, like one: Thomas always having to be the life of the party.                                                                         


So as Thomas acted like a class clown while throwing out one liners…such as the one he said to my sister: So Sam isn’t swimming in the kiddie pool anymore? Everyone got a laugh out of that one. Don’t worry, Michael had some funny things to say as well, but one moment that I caught on camera was Michael almost overfilling his cup and then getting excited to drink it.

After Michael’s fiasco we continued eating and I snagged some pictures of my wonderful dad. He wasn’t to pleased about this, but I did it anyways…one day he will thank me. I also snagged a picture of Elizabeth and Thomas while my grandmother had her eyes closed.

After I harassed my family a little bit more it was time for desert. My grandmother made two deserts. A pudding pie as well as brownies so we could have brownie sundaes with HOMEMADE hot fudge sauce…..YUM. As well as desert, my family harassed me with pictures. Overall it was a good night with lots of laughter, but I am glad to be back at school even if it is for two more weeks! So crazy to think I am halfway through my college career…I am two decades old….I am studying abroad in England next fall (I have never been to Europe)….I am applying to a new job (crazy scary)….and I will be looking for internships soon. My life just seems to be flying by without me even noticing. So here are the rest of my pictures from Easter!!

I guess if you don’t know my family you may not find these funny, but they actually are. So now that I have bored you with my awesome family, I will post next about the delicious bbq chicken pizza I made for dinner tonight! 

BBQ Chicken Pizza and The Foobar Restaurant

So no pictures to go with this post unfortunately. My camera died and I haven’t had time to run to the store to get new ones. Thursday night I convinced my mom to make bbq chicken pizza because I was craving it. The ingredients are very simple and are based on your liking. I promise you I will be making this pizza as soon as I return to school and I will upload pictures as well steps I used to make it. Super yummy and if you like bbq pizza I suggest making this. As for other food. Yesterday I went to visit some friends from high school at UNH. I met my friend Hilary at her apartment and we went to downtown dover for some chinese food. She got sesame chicken and I got chicken chow mein. THIS JUST IN….CHICKEN CHOW MEIN IS NOT THE SAME AS LO MEIN!!! I was not pleased to say the least. Never again will I get chicken chow mein. Oh well. After lunch I went to my friend Taylor and Alicia’s room where we waited for Sam to come pick us up for dinner. Taylor decided we would go to the Foobar Restaurant in downtown Portsmouth. The food was delicious and the atmosphere was nice, only bad thing I was freezing. At the Foobar we all got something different. We started out with a hummus platter and Alicia got a margarita salad (although she only ate the mozzarella cheese and the tomatoes). For dinner I got a lobster BLT and it was so good! Instead of normal fries I got sweet potato fries and the change from normal fries was delicious. Taylor got Guinness steak tips (I think the only reason she got it was because of the broccoli). Sam got the ginger Salmon. That was my second option for a dinner and she said it was really good. Alicia got vegetable scampi telling us the entire time….if this isn’t pasta I’m going to be extremely angry with you guys. It was pasta don’t worry. Last but not least we got wrangled into desert. I was completely okay with that because as soon as Taylor said they had fried Oreos I knew I needed to have them (once again I have an issue with how much I enjoy Oreos). It came with four Oreos and each of us had one. The waitress was really nice and gave us each two scoops of ice cream to go with it. I decided that I need to learn how to master making fried Oreos and just found a recipe. Well that is all for now, all I know is I cannot wait for all the delicious food tomorrow and promise to take pictures!!
